Тутманик (Tutmanik or no kneed easy cheesy bread)

This bread is not just so easy to make, but it is incredibly delicious with a moist soft texture inside and crunchy crust on the outside. And the buttery smell ... mmmmm!

Ingredients for the dough:

4 and 1/2 cups flour (depends on the flour you are using, the amount could be a little bit more or less)
3 cups warm water
1 tbsp dry yeast
1 tbsp salt
1 tbsp sugar
2-3 tbsp oil (olive or sunflower)

You will need also:

125 g butter and 50 ml oil
250-300 g feta cheese (crumbled)
1 egg

Preparation:

     Mix all of the dry ingredients for the dough in a large bowl. Add the warm water and the oil and mix well with a spoon until soft sticky dough forms. Add more flour or water if necessary.
Cover the bowl and let it rise until it doubles. Mix it again and leave it to rise one more time. When it has risen the second time, melt the butter in the large baking pan. Mine is 13" (34 cm) in diameter and 3" (7.5 cm) deep. Add the 50 ml oil.
Just a warning - use a large deep pan, not smaller than mine. When you start baking the bread, the dough will continue to rise and you will have butter dripping all over the bottom of your oven. Then you fire alarm will go off...
Dump the dough in the prepared pan, put some oil on your hands and start spreading the dough out. Put half of the crumbled cheese in the middle 1/3 of the dough. Grab the sides of the dough and stretch it over the cheese, completely covering the cheese from all sides. With oily hands start patting the dough and spreading it until covers the bottom of the pan. Put the rest of the cheese, stretch the edges of the dough again to completely cover the cheese and pat it down some more. Flip the dough upside down and continue patting and stretching until the bottom of the pan is completely covered. If the dough breaks here and there and the cheese shows up, don't worry - it's completely fine.
Cut the dough in a large squares (I use a pizza cuter) cover the tray with a kitchen towel and let it rise again for about 30 minutes or so.
Preheat you oven to 360 F (180 C). Beat an egg with a little bit of milk or water and brush the risen cheese bread. Pour the rest of the egg wash over it if you have some left.
Bake for about one hour or until it is golden brown on top and the pan feels light when you pick it up. Remove it from the tray and place it on a cooling rack.
Let it cool for few minutes and start enjoying it with some fresh tomatoes, dry salami or some more cheese.
